Prebiotic starch and fibres

The increased interest in having a healthy life style combined with good eating habits, has resulted in an exceptional increase in the introduction of food containing beneficial ingredients, the so-called functional foods. A large number of these types of food are directed toward the maintenance of a healthy intestinal flora, containing many good microorganisms, termed probiotics. A way to increase the amount of beneficial microorganisms is to consume indigestible carbohydrate, termed prebiotic which only the probiotics can utilize . Resistant starch is provides these functionalities. The project exploits productive effect of probiotics prebiotic systems using selected probiotic strains and prebiotic carbohydrates.
